[Solved] Try to delete text → "Read only content cannot be changed"
How can I remove a page in a document I can't get a cut sign to come up so I can remove a page but keep the other pages ?

Pages in OpenOffice are inserted as the flow of text needs them, or, when doing advanced formatting, by the User for specific purposes. Turn on /View /non printing characters; now look at the page in question: is it composed of backwards P characters (Pilcrows)? If so delete these.
/View /Non printing characters turns the display off, as well as on.

What type of documents you mean?
In a Draw and Impress document you can delete the pages separatelly.
You can delete the Sheets separatelly in a Calc document. But on a specific sheet will be divided into printable pages according to the contents of the sheet.
And the Writer has not a Page-based structure. The text flows over the pages. You must delete the text and (maybe) the page will be delete.
Please upload a sample file here, and give us some more detalis...

2. Press Backspace repeatedly until the page goes

If the document is coming up as "Read only" then there may be a problem with file write permissions.
Turn on display of hidden and archive files for the folder in which the file lives. With OpenOffice closed, see if a lock file is displayed in that folder. If so, delete it. Note that a lock file is typically only a few hundred bytes, whereas the owning file will be several kilobytes. Do not delete the wrong one!
Is the file on separate media, such as a USB stick or a network location? If so, as a quick workaround, at system level (i.e., in Windows) move the file to the local hard drive; your desktop should always have full read/write permissions for you, so move it there and see will it edit in that location. You may afterwards move it (again, at system level) back to the storage location; sorting out why you do not have full permissions in that location is a different matter.

Is this a document you received as an attachment to an email and opened from your mail software? If so, it will be read only; to edit it, save the document from the email and then open it with Writer.

The posted message is what is displayed when you try to edit a protected section. If you have a protected section in the document, select Format > Sections and uncheck the "Protected" option.
